MICRO GREENS: 40 TIMES THE NUTRIENTS?!

Did you know that Micro greens, while tiny and well...micro, are a nutrient powerhouse? Studies show that due to the stage of life micro greens are harvested during and the amount of plants represented, one handful of micro greens holds up to 40 times more nutrition than the same plant in mature form. (visit research) While dozens of micro green varieties are available, most are rich in iron, zinc, potassium and copper as well as compounds such as antioxidants.

Due to micro green's undeniable benefits we encourage our community to incorporate micro greens into their regular, weekly diets. If you need more convincing here are a few legitimate reasons micro greens should be on your plate at least once a week.

1. Easy to Add to Meals: No more fighting your kiddos to eat their multivitamins. Most micro greens are mild flavored and can be added to sandwiches, soups, salads, stir frys, pizza, pasta and so much more. Simply sprinkle into the dish after cooking and you've just given your meal a nutrition face-lift. Remember, up to 40 times the nutrition!

2. Inexpensive Form of Nutrition: Our farm sells micro greens through our CSA (click here to sign-up) for the cost of most other vegetables. What's nice is, again, they are power packed with nutrition and therefore, micro greens are much more valuable vegetable in terms of nutrients per dollar spent.

3. Year Round Accessibility: Micro greens are not a seasonal crop and thus can be grown year-round which keeps accessibility and prices consistent. Have you ever seen the price of fruits or vegetables at the grocery store quickly jump in price between seasons? One reason is most vegetables and fruits, pending the part of the world they are grown in, have specific seasons they are grown in. So, for example, to keep mangoes on the shelf in winter here in Tennessee, it costs more money as they are in higher demand with lower supply and they may have to be shipped from even further away.

As always, stay connected to your local farmers and if you're interested in learning how to grow your own food email geoff@hopewellfarmstn.com to be on our list for our next Sustainable Gardening Course!
